I like that story, things always work out that way.


The only tricks for a good crust are don't over work the dough. You don't have to keep it too cold, if its too cold then it becomes brittle. The more you mix or roll the dough out the stiffer it gets and loses its flakiness. (Are we talking about dough here? I lost my train of thought for a minute) The shortening is what gives the flake to the dough so if it is over mixed or over worked the shortening is melted into the dough and when the dough is baked and the shortening melts and evaporates it doesn't change the texture. Too many days spent in that lecture room listening to the professor drone on about the physics of baking. Can you imagine I actually took classes like this and even worse. But I did learn a lot.
