Hi Rosie! I guess I should have thought to include info on Rotel in the recipe - Syncie asked me the same question!

Rotel is the brand name, Tomatos with green chilies. They make a regular (which is hot to me) and a "hot" version - its at every grocery store here - sometimes in the Tomato sauce section and sometimes in the Mexican Food or Salsa section. Its not like a salsa, although perhaps one would do for a substitute, it looks exactly like stewed tomatoes to me. The cans are the same size as regular Campbells soup - so I guess you could use a small can of stewed tomatoes and add part of a can of chopped green chilies (El Paso brand comes to mind - the cans of these chilies are pretty small) or maybe some extra spices.

I can't imagine how cold your winters get up there - we've got our first cold day of the year here today but I don't think it'll last. It was a real treat to have an afternoon coffee today - something I haven't done in months.
