This is my coveted recipe for cheese cake. This is the one that I entered in a county contest when I was 11 years old and won first place. I decided then this is what I wanted to do with my life in terms of a career. So hear it is....

Cheese Cake

1 lb. Riccotta cheese (go for the Whole Milk)
1 lb. Cream cheese
1 1/2 Cups of sugar
4 Eggs, beaten
Juice of 1/2 lemon
1 teaspoon Vanilla
1 teaspoon Cornstarch
1/4 lb. Melted butter
1 Pint Sour cream
3 Tablespoons Flour

Cream all the cheese's in a bowl and add sugar gradually.
Cream this mixture until well incorporated. Add eggs
Slowly, and beat well. Stir in lemon juice, vanilla, cornstarch, and flour. Add melted butter and mix until smooth. Last blend in the sour cream.

Pour into a well greased and floured, 9 to 10 inch spring pan. Bake 325 degrees for one hour.
After the hour, turn off heat and allow the cake to remain in the oven for up to two hours to cool. This should prevent the "crack" that sometimes will appear. It is do to the cooling process as well as the denseness of the cake.

**Note this is one of those cakes that you must not open the oven door during this cooking or cooling time.
You can serve this with fresh fruit, or an unsweetened whipped cream. Enjoy!!
