Okay here's what I came up with.
Spice Cake

2 cups flour
1 1/2 cups sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1 cup buttermilk or sour milk
1/4 cup margarine or butter, softened
1/4 cup shortening
1/2 teaspoon vanilla
3 eggs

In a bowl, combine flour, sugar, baking powder and soda, cinnamon, nutmeg, cloves, and ginger. Add buttermilk, margarine, shortening, and vanilla. Beat until well combined. Add eggs and beat again, should be smooth.
Pour batter into a greased 13x9x2 inch baking pan. Bake at 350 for 30 minutes.

Note** can make applesauce spice cake by reducing buttermilk to 1/4 cup and add 1 cup of applesauce.

Cream cheese icing

2 3 oz. packages of cream cheese
1/2 cup softened butter
2 teaspoons vanilla
4 1/2 to 4 3/4 of sifted powdered sugar

In a bowl, beat together the cream cheese, butter, and vanilla. Should be light and fluffy. Gradually add the powdered sugar. Add as much of the sugar you need until the icing reaches a spreading consistency. May not require the whole amount.

Note**can make chocolate cream cheese icing by subsituting 1/4 cup unsweetened coca powder for 1/4 cup of the powdered sugar.

Hope this is what you were looking for. Spent the evening watching the world series. Since we are from NY it is like maddness over here with both of our teams in the series.
