Hi everyone. Well I did buy my pumpkins for pies yesterday. Also bought the stuff for cookies. I'll get those cranked out this week - we've had enough rainy days around here lately, these will be some good rainy day projects. If only my piecrust turns out (xing fingers).

Thought of this tip - when my Mom makes lasagne, she crisscrosses the noodles. 1st layer goes across, 2nd layer goes long, etc etc. When you cut your lasagne, it actually stays together in a nice square when you plate it.

Speaking of lasagne, I have a great cookbook from the Lake Austin Spa Resort - contains a great Spinach Lasagne recipe - they don't pre-boil their noodles - they put them in hard. Since I read this years ago, I haven't boiled lasagne noodles since.

I'll post a recipe later this week for a pumpkin roll. I went to a festival last year where they served this pumpkin cake/bread, jelly roll style - cream cheese frosting was the filler. It was so very yummy. I found a recipe for it.
