Gingerbread Pancakes Gingerbread pancakes are not so much a recipe as a national inheritance, an heirloom nestled in that part of our collective consciousness that Norman Rockwell knew so well and captured so faithfully....These pancakes are a Sunday morning tradition at Lake Austin Spa Resort; we invite you to join us in keeping the candle lit. 1 cup all-purpose flour 1 1/2 tsp baking powder 1/2 tsp ground cinnamon 1/2 tsp ground ginger Pinch of ground cloves 1/2 cup skim milk 3 tablespoons molasses 1 tablespoon vegetable oil 1 egg, lightly beaten Vegetable cooking spray Combine dry ingredients. Combine wet ingredients separately. Mix together until just moistened. Spray a skillet with cooking spray and cook large spoonfuls of batter over medium heat, turning once. Yield: 8 pancakes 91 calories / 2.2 grams fat per pancake
