Quite true

Janson's "History of Art" is a good starting point for a survey of western art

especially if you want to start with the great, long dead artists.

Or you could do it the other way around, and start with art that is being made today and track its antecedents chronologically back.

Depends on the person doing it.

That's one of the nice things about art. It's pretty open ended and there's room for many people and many approaches (but most people don't pay much attention - and that's okay too).
