Here is a traditional family recipe for Thanksgiving and you guessed it....it contains oysters! This is my mother-in-laws recipe and if you are an oyster lover you will really enjoy this casserole!!

Ellen's Oyster Casserole

4 pt. Oysters
2 sticks butter
4 c. bread cubes
1 c. celery, diced fine
1 c. onion, diced fine
1 c. bell pepper, diced fine
salt and pepper to taste
1 c. medium Cheddar cheese, grated

Brown bread cubes in butter, using 1 stick of butter at a time. Butter a 5 qt. Corning Ware dish. Drain oysters; hold the juice. Put ½ of the oysters in baking dish, then ½ the vegetables, salt and pepper, then a layer of bread cubes and another layer of oysters, vegetables and bread cubes. Put about 6 T of oyster juice over top. Add a little butter on top. Bake for 1 hour at 350, covered. Add Cheddar cheese. Return to oven for 30 minutes.

Note: Soda crackers may be used instead of bread cubes if desired.
