Hi everyone - been running around here lately (literally) having some house problems (headache!). I baked those little baking pumpkins last weekend and made the pumpkin pie (Martha Stewarts recipe), but I cheated, using a Pillsbury pie crust which I rolled out a little thinner. Considering that I ran out of brown sugar, so I had to use mostly regular sugar, and my cornstarch was missing (which neighbor did I lend that too???) so I used flour instead - it was INCREDIBLE!!! - Oh, I also used egg beaters instead of all the eggs it called for. It was a very pretty light pumpkin color, and had a very silky texture - sort of custard like. Anyway, I had lots of pumpkin left over (in my freezer) so I might try it again this weekend (perhaps the recipe way this time!) and might make some pumpkin muffins too.
