So I don't see how it can all be resolved in time for the Electoral College to vote, unless the hearing and all appeals are expedited.

Multiple cases have been consolidated and the Florida State Supreme Court, en banc, will be hearing oral arguments on Monday, commencing at 2PM EST. It is anticipated that the court will then require several days to issue its decision.
IMHO, this decision will most likely be the final determination of the affair. Whoever loses will most likely take their grievances into Federal Court, where, I presume, it will be dealt with once again as in the case of the Republican pleadings before the 11th Circuit in Atlanta last week. The federal court will be loathe to intervene in what is essentially a state level issue.
