I don't know if I can be of any significant help, but....
I know some use the baking bags for the turkey and it comes out great and with less mess, and a moist bird. I personally have never tried them, and have always just kept basting every half hour. The other thing to do is to keep it covered the whole time with aluminum foil until the last half hour or so. You can put a quartered onion and some celery stalks in the cavity for flavor, and toss them when its cooked. Brush the bird with oil or butter, prick the skin to let the fat drain out. My aunt has put a can of beer in to the pan to add a different flavor. When beer cooks off it usually leaves a hint of a nutty flavor. You can try different cooking wines to if it will compliment the rest of your dinner.
For the dressing. The one thing that my Mother in law does perfectly is the stuffing. I don't know her recipe its her secret. But I have the feeling it falls under the category of "too gummy". So I have a few alternatives if they fit the tastes of your family. Good luck with all the cooing and Have a very Happy Thanksgiving.
