Here's a Thanksgiving tradition that I made last night. It is always better if left to marinate at least 24 - 48 hours before eating. It only takes about 20 -25 minutes to prepare.

Marinated Vegetables

Bring to a boil and let simmer for 5 – 10 minutes:

1 cup sugar
1 cup vinegar
½ cup oil
Set aside and let cool while you prepare the vegetables.

Dice into small pieces and place in large bowl:

1 stalk celery
1 medium bell pepper
2 carrots (small, round circles are best)
1 medium onion

Drain each can/jar then add to diced vegetables:

1 can white shoe peg corn niblets
1 can french style string beans
1 can sliced water chestnuts
1 large jar of pimento
1 can small English peas

Pour sugar mixture over the vegetables and stir slightly. Cover and place in the refrigerator, stirring occasionally to coat vegetables with liquid. This is a light, crisp side dish with a wonderful flavor!
