Oyster Stew.....

This is from a good friend, with her comments to me....She is a very particular lady, and has eaten in some of the best restaurants in the world....This sounds really good, even to me who really doesn't like oysters, except totally dried out (as I said before)....I do like their taste however....

"For four you need about a quart of fresh oysters. (Canned oysters make
minor
league stew and I don't want to be involved.)
Glunk the oysters in a saucepan. Simmer the oysters gently in their
juices for about three or four minutes until they begin to firm up. (I
use a
skillet so they are just one layer and add white wine and water until
thye
are half covered with juice.)
Remove from heat and strain the juices into a second saucepan. In
a
large saucepan pour four tablespoons of melted butter and add four
tablespoons of flour until a smooth paste. Slowly add one can of
undiluted
chicken broth, stirring until smooth. Place on low heat and heat to a
smooth,
thick soup. Add one tsp worcestershire sauce, pinch of cayenne pepper
and slt
to taste. Add 1/2 C oyster liquid and heat. Add oysters (I cut mine
into
half or quarters if they are large, after they are "plumped up") Add 1
cup
half and half. Heat, do NOT boil. Serve with a pat of butter and
oyster
crackers.
