Yes it is a Sanskrit term, originally found in the Vedas. It was argued that a diet that was simple and free of violence would calm the mind and free it form disturbance . This would allow the focus and concentration needed for prayer/meditation. Saint Francis of Assisis was an example of a Christian saint who followed the ascetic lifestyle.
