If the nature of GC is truly unknowable, and probably irrelevant, why do we bother talking about it at all?

I think discussing GC reinforces our connection to others and improves our understanding of the effects of our personal actions. It is through service to the GC that we expand our sense of consciousness. All religions seek to do this in word but obfuscate by using excessively mystical terms or heavy ritual. It's not mystical, really. It is unknowable in its entirety.

I don't think that is the necessarily the same thing. Just because it is unknowable in toto doesn't mean that there isn't a resonance when you get things right. Learning to recognize the positive and negative resonance is essential in determining one's impact on others. If one seeks to be a moral and spiritually enlightened person, you seek the positive resonance and avoid negative ones. Rejection of the "many paths" principle is a negative resonance because you devalue others by embracing only some of the potential that is out there. IMO.
