Strufuli (Honey balls, or GiGi)

6 eggs beaten
3/4 cup light veg. oil
1 cup sugar
1 tablespoon vanilla
5 cups sifted flour
6 teaspoon sifted Baking powder

Mix together all ingredients until a smooth dough is formed.
Lightly greese pans, use butter it works best. Shape dough into l-2 inch thick long snakes, use a sharp knife and cut small approx. 1/2 inch sections, then use round them in your hands to shape the ball. Bake 350 degrees for 10 to 12 minutes. Should not be too brown.
Heat in a large pot, pure honey not to a boil but so that is warmer than cooler and is fluid. Take off the heat. Put as many of the cooked and cooled balls into the pot and even coat. Take a muffin pan that you have placed muffin cups into, or set up a dish or bowl that can hold the muffin cups erect. Using a slotted spoon, laddle out enough balls to loosely fill the cups. Sprinkle some non perils or jimmies if desired. The honey will set up fast, you can sprinkle some powdered sugar when completely cool too if desired.
Go into any italian house for the holidays and you will find these on their tables.
