Does your broker direct your option trades to a single exchange? There are many who will only send an order to the Amex or the CBOE depending on who pays them for the order flow. You may be seeing executions at other exchanges if you're looking at composite quotes. My broker lets me direct to any exchange that I like, or will do it for me through a 'best execution' algorithm. Executions are next to instantaneous. Commissions are cheap too.
