16meg ought to be plenty, I think ...
so that probably isn't the difficulty ...

my friend had some problems with 2000 and the 4 monitors, but did get that whipped with the addition of some new video cards ... seems as if he went to ATIs .. don't recall which ones tho...
but
seems as if he was really having severe problems with his cable hookup and recog/logging on/hookups ....
he builds his own boxes too but he was having trouble uninstalling 2000 ...

as he'd not been using it but a couple of weeks I talked him into just reformatting the HD ...
I've found that to be the very best solution *(for me)* when adding/changing anything major such as OS.

He currently has a homemade box running 4 monitors and another homemade one running duals ... both on 750PIII.....
he isn't as much of a "havegottahaveit" on memory as I am tho ... both of his boxes are running 128meg of RAM ...

I've got 256meg on 2 of my 3 ... one of them is an email only ... nothing else on it either, just email .. and I think it has 128 ...and 16meg ATIs are what I'm running on the video cards and have no difficulty ...

I can remember overloading a older monitor last year by using more resolution that it was meant to carry by downloading a new driver ...
it is possible for you to try a reduction of resolution to see if that eleminates your problem.

think I'll take the rest of the weekend off, but I'll check Mon to see if you've whipped it.
