My Christmas gift to you and yours and all of the wonderful people to read and contribute to this thread is a simply fantastic recipe for Cranberry Salsa. I made it for our Thanksgiving Dinner and it was a big hit - even among those who aren't necessarily salsa fans.

Cranberry Salsa

Slightly saucy but with the chunky texture and fresh flavour of an uncooked salsa, this colourful condiment goes perfectly with roast turkey.

1 1/2 cups fresh cranberries
1/3 cup granulated sugar
1/4 cup water
1/2 cup chopped red onions
1 jalapeno pepper, minced
1 small orange, peeled and chopped
1/4 cup each dried apricots and golden raisins
1 tsp grated lime zest
1 tbsp fresh lime juice (or to taste)
Salt and pepper to taste.

In saucepan, combine half of the cranberries with sugar and water. Bring to boil, stirring often; reduce heat and boil gently, stirring often, for 5 minutes or until skins pop. Add remaining cranberries and bring to boil. Remove from heat; pour into bowl and let cool. Stir in remaining ingredients. Chill. Makes about 2 cups.

I'm going to double the recipe for Christmas.
