I have six legs of lamb in my freezer. Got them almost free from a friend who raises lamb. Goose is excellent also. Last year I went goose hunting at my place in VA. We took gobs. I took five in one day, I think. I put them on the spit too, after soaking them in Wishbone Italian salad dressing (no dang kidding) for about five days. I spice them as the mood hits, sometimes coriander here too, then spit them until they are nice and crispy. I have it served with a robust Beaujolais cellar temp. My my. That is VERY good.
