Butter Candy

1/4 cup butter
1/2 cup light corn syrup
3/4 cup of sugar
3 to 6 drops of food coloring

Combine all ingredients except food coloring in a 1 quart sauce pan. Cook over medium heat stirring with a metal spoon until mixture is melted and combined. When mixture boils reduce heat and stop stirring. Place a candy thermometer in pot and let mixture reach 180 degrees and no higher. When it has reached said temperature drop the food color in and give a quick stir to combine color.
In the mean time lightly butter metal open cookie cutters and lay them out onto a lightly buttered cookie sheet. Then pour the candy mixture into when it has reached the 180 degrees. Pour about 1 tablespoon in each form. Let cool for 20 minutes or more.

This is really an easy candy to make. I used some tartlet molds I had and buttered them and filled them a quarter of the way up. Then I pour some on to a marble surface and was able to handle almost immediatley and made some sugar ribbon candy. It tastes something like butterscotch.
