To My Old Buds...It's been one Heck of a year in the Markets, so I decided to post the Gator Menu for Christmas...Best of Holidays and New Years to All!!!
We'll start with raw Oysters on the Half Shell, or for the meek, Shrimp Cocktail using U16-20s, don't buy the already prepared, take the time to boil your own in the shell with some Balsamic and Old Bay...For the Oysters, find a horseradish root, and grind your own, mix with Heinz Catchup, for an added dash, give it a shot of Sriracha Chili Sauce (really hot and a touch of garlic, or Worcestershire, to your dipping sauce...
A roast Goose stuffed with Apples and a touch of onion (4-1)...

(Some may want to add a bit of caraway seed, though I'd reserve the caraway for the cabbage)...

It's much better to roast fresh chestnuts ,(do not dry them out), then dice them, rather than using a canned version...for an added boost add at bit of Marjoram and Ginger to the dressing...
