Hi Drea - Hope your holidays were great. I was just told by a girlfriend that today is Three Kings Day - the day that the three kings reached the manger with their gifts - Mexican tradition is to put my shoes by the window. New one on me! I didn't get a chance to comment on the Tres Leches Cake recipe I posted the other day. My favorite place to eat in Houston (Churrasco's)serves this cake. A pure slice of heaven! I came across the recipe after I made it for dinner a few nights ago. I've always winged it - so I haven't tested the posted recipe out yet. At Churrasco's, you get a generous square of cake. Its probably a good two inches high - only one layer. Its a dense cake that is saturated entirely with the creams. I've usually baked a plain pound cake and poked holes in it, poured the creams on it and you almost have to let it sit in the fridge for a good day to two days so that the creams get soaked up. It is always served very cold - straight from the fridge.

I've gotta get out for some serious exercise tomorrow (and the next day, and the next day).....

My breakfast lately has been this little sandwich...toasted english muffin, egg beaters, canadian bacon with a little low fat cream cheese. Tastes great!
