LIMA BEAN SOUP
LEAN STAR CUISINE COOKBOOK

The perfect venue for the too oft maligned lima, this buttery, robust soup is quick and easy to make, yet it tastes like you spent hours in the kitchen.

12 oz frozen lima beans
2 cups defatted chicken stock
1 clove garlic, minced
1/3 cup diced onion
1/2 tsp thyme
1/2 tsp oregano
freshly ground black pepper

Simmer all together until beans are tender. Puree two thirds of the mixture in a good processor or blender and then return to the pot. Add to the soup:

1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrot
1/2 cup diced bell pepper
1 clove garlic, minced

Simmer until the vegetables are just done. Thin with additional stock as needed.

Serve hot, garnished with minced chives.

Yield: 10 servings
149 calories/ .75 grams fat per 6 oz serving
