OK everyone, I have a very simple recipe for fantastic artichokes and dip.

Artichokes are in season right now and the are huge. At least they are in California.

First of all ------Steam the artichoke ----NEVER BOIL [they get mushy and wet]
Cut straight across each tip to remove the stickers.
Use a knife to cut the top flat.
Cut stem off at the base of the artichoke.

Put water in steamer just below your basket.
Add to water.
Little olive oil
Italian seasonings
Garlic clove.

Place artichokes in basket, base down.
Steam until a leaf pulls off easily and taste tests perfectly. Approximately 45 min to 1 1/2 hour, depending on size.

DIP

Mayonnaise (MUST BE BEST FOODS - Helman's [I think] in the east)
squeeze of fresh lemon juice
Lawrey's Lemon Pepper to taste.

So simple, but absolutely delicious!!!!
