I would guess that the correlation between education and atheism prevails everywhere except in countries where atheism is imposed by government, where I would expect it to be reversed. In countries where religion is not restricted, very few people are raised as atheists. Most atheists become atheists by conscious choice, just as those who adopt religion in countries where atheism is imposed do so by conscious choice. Adoption of a philosophical or religious system by conscious choice is more likely among educated individuals; the less educated are more likely to stay with the religion of their youth, or to adopt the posture that those around them are adopting. In addition, describing yourself as an atheist in an environment where religion is glorified is an act of intellectual rebellion, just as declaring yourself religious in an environment where atheism is glorified is an act of intellectual rebellion. Intellectual rebellion is generally most prevalent among the educated.

Those are guesses, but I would be surprised if they are not fairly accurate ones.
