Speaking of lunch - easy hard boiled eggs. Put eggs in a pot with a lid, cover with cold water, bring to a boil, boil for one minute, turn off the heat and let sit in the hot water. When the water is cool enough to put your fingers in, the eggs will be perfectly boiled, not too hard and not raw in the middle. I boil a half dozen and put them in the fridge to use in salads and sandwiches.

You can put them back in the egg carton with the raw eggs if you know the trick of telling raw from boiled. Put the egg on the counter and spin it. If it spins fast, it's cooked. If it wobbles, it's raw - the yolk throws it off center. Or mark an "x" on the cooked eggs with a pencil.
