KLP ... preparing an EASY lunch for one ... MzNemer is staying at her office so I'm a bachelor today and here is what I'm fixing .... sliced/diced some roast from the one I cooked in the crockpot couple of night ago .... six inch corning ware pot tortilla sprayed with "can't believe it's not butter" layer of roast sprinkle of shredded cheddar another sprayed tortilla layer of cottage cheese light sprinkle of japelenos light layer of Picante Sauce another sprayed tortilla layer of roast layered cheddar cheese layered cottage cheese topped with another tortilla (this one is "cover only" to be eaten separately OR discarded) microwave .... pretty EASY and good with a salad on the side and a couple of nonsprayed tortillas heated directly ON* the electric range top coil and flipped with tongs ........ spray them AFTER removal from the heating coil
