I prefer mutton, which is two year old sheep, roasted, cold, with mint sauce [not mint goop which they call mint sauce in supermarkets]. Hogget is one year old and lamb less than that. Actually, I'm guessing at those ages, but it's just a matter of age and about those times. I have no idea what the wool/meat/skin/breeding balance of profitability is. Mqurice
