Got me thinking. Lets do a breakdown here. Correct me if I am wrong, but ~5,825,000 votes were cast in Florida. Let's see how many votes per second this would take to complete in 48 hours, assuming two 12 hour shifts, one per day, just to be conservative.
5,825,000/24 = 242,708 per hour 242,708/60 = 4045 per minute 4045/60 = 67 per second
If only 100 people are counting votes *in the entire state* the entire state could be hand recounted in two 12 hour shifts, counting one vote roughly every other second (which you have to admit is pretty leisurely.) So, its not too far fetched that Florida could be easily recounted in less than 2 days. That assumes your not divining votes, however. Even so, given the considerably larger number of counters (there were a lot more than 100 people recounting) you could probably spend a whole minute per ballot contemplating the finer points of chad-dom and still recount the state in 2 days. And if you counted round the clock, it would be a cinch.
