You were told wrong. With any white fleshed fish, you need to trim any dark colored meat. It has the strongest taste. Some will hold carp in a clear water tank for a week or so before cleaning them.

Now they are netting carp in the Illinois River. Many of the taverns along the river serve carp sandwiches in the spring. They score the filets and fry them slowly to melt the bones.
