GZ's Split Pea Soup

Ingredients:

24 ounces of split peas
12 8 ounce cups of water
1 big onion chopped finely
1 full bunch of celery just cut into half
8 ounces of carrots cut to bite size
2 full tablespoons of hot Jamaican curry
2 teaspoons crushed dry red peppers
2 tablespoons of extra virgin olive oil
1 tablespoon of sage
1 tablespoon of thyme
1 1/2 tablespoons of coarse kosher salt

I suggest using a 6 or 8 quart stock pot...

Heat the stock pot over a high flame, then heat the olive oil in the stock pot.. then saute the onions and carrots in the olive oil... add the curry powder and sweat the mixture, then add the celery to coat the celery with the mixture...

Add the split peas, and all the other ingredients except the salt into the stock pot, cover and bring to a boil... let the water boil for about 5 minutes... then leave the cover on but reduce the heat to simmer for another 90 minutes stirring occasionally, then remove the cover and stir... let simmer for another 30 minutes or more until the soup thickens to desired thickness (I like it very thick), about 3 cups of water is evaporated..... I like to remove the celery after cooking since all the nutrients and flavor are already out of the celery... then salt, salt to taste... the onions should be dissolved into the soup... the carrots are nice and sweet.....

The curry adds a nice sweetness to the soup but you really don't taste it in the finished product... the crushed dry red peppers add a nice heat to the soup.....
