As per your request.....

Fried potatoes....green and red peppers and onions..

Lotsa potatos....cut 1/8 inch....peeled or unpeeled but scrubbed to death if not peeled.....and make them uniform....cut them on a bias and you will have part mush part raw...baking potatoes are best.....the dark yellows mush.....reds don't work well either....

Slice into strips....Green and Red peppers.....ratio..usually 3 green to one red....

one large onion....vadaillia is best....sliced lengthwise.

In large cast Iron skillet....very large.....heat till water bounces....then add enough olive oil to cover a grain of barley....maybe 1/16 of an inch.....

add Peppers and onions.....salt and pepper....stir and cook till softened.....not crisp and not mushie...

take out and drain oil back into skillet....you need all the oil you can get....

add potatoes....cover.....let steam help the process....turn frequently as you don't want them burned

when just about cooked......softening....raise heat a bit and sizzle the potatoes while at the same time adding back the onions and peppers.....

if they burn slightly...they will be excellent....salt and pepper again.....fine black pepper is best

when all appears cooked and a bit crispie in some places...add a dusting of paparika.....light dusting.....

if they are undercooked you will not enjoy....if over cooked....not so bad....when you get them perfect...they are superb.....

use Catsup sparingly in dish........(Pittsburgh native here)

If you have an adversion to oily foods......don't even try this.....

it's only salvation is olive oil.....in the old days....this stuff would kill you.....
