Pene Pasta with White Bean and Sun Dried Tomato Sauce

1 cup sliced onions
1 teaspoon minced garlic
1 cup Vegetable broth (can get in store)
2 (15 oz. cans) white cannellini beans
1 cup sun dried tomatoes (not oil packed) quartered
1 teaspoon dried thyme
1 teaspoon dried basil
salt and pepper to taste
1 pound Whole Wheat Penne Pasta

Combine onions, garlic and 1/4 cup broth in a large pot. Simmer over med. heat until onions are soft. Stir in beans with their liquid, sun dried tomatoes, thyme, basil, and remaining 3/4 cup of broth. Bring to a simmer and cook uncovered over med. heat. Cook pasta al dante, drain and transfer to bowl add sauce and toss to mix.
Serving size is: 2 cups pasta, 1 cup sauce
