To me, it looks like you've accidentally removed some file with a critical bit of code for your Office software. If you have your Office CD and the Product Key available, simply re-install Office. It's not difficult at all, when compared to installing Windows. Of course, you'll lose some settings, but it's a small price to pay for knowing for certain that you have all the needed files once again.
The problem with un-installers is that they don't know if the bits they're about to delete are used somewhere else. The cautious ones issue a warning, and cautious users should indicate the files are to be kept. Of course, this could leave unused files on your system, but the price is small when compared to dealing with the complications arising from being too ruthless, as you're finding out.
As for the entries missing from your un-install menu, you may need to search your system for the uninstalling programs manually. Play detective and look for files in the program folders with catchy names: uninstall, remove, or uninst. Again, if you're not sure, play safe.

P.S. I've used a program I've downloaded which checks my system for unused .DLL files. It moves them to a separate directory, and after running the system without them for some time, once I'm sure things are OK, I can delete them. If problems appear, the move can be reversed.
So, Un-install cautiously, then run this cleaner. Un-install removes the easy stuff, the cleaner then removes the tough.
