Been experimenting with chipotle peppers... it you havent tried these peppers you must. the ones i am currently using are canned - and delicious. they have a unique roasted flavor - VERY spicy - and you need not use much. Last nite i made this -- and i for one liked it -- but since i only made it for myself - who knows COD CHIPOTLE style pour a litte beer over your cod fillet salt and pepper the fillet crunch up some corn tortilla chips and add them to some flour and coat the fillet heat up some oil [or oil and butter] add a about 1/2 chipotle pepper and a clove of garlic [for 1 large fillet] and pan fry. serve with a slice of lemon and garnish with cilantro i ate mine with flour tortillas true mexijun food !
