Have a few tips for fat free cooking that I have come to learn on this vegetarian quest we have been on.

Apple sauce or Prune puree is a great substitute for butter in baking. Need to adjust the water content to suit the consistency, but it does work well.

Fat free cottage cheese works well as a substitute for ricotta cheese in cooking. It actually melts and has a thick consistency such as ricotta.

Tofu cheese really does taste like the real thing and makes a great pizza.

I have experimented with many recipes and have accumulated some of our favorites. If anyone is interested in any of them let me know. Some have been surprising.

Though I still haven't figured out a way to make chocolate non fat. <G>
