Here's my crack at it, which Joan will correct.

Me is objective. I is subjective.

Between takes an objective pronoun. So it's between you and me. For him and me.

Just between you and me, you and I are the only ones to get it right.

My rule of thumb has been to take out the you and see how it sounds. Doesn't work well for between, but, for example, if you reduce "The book was given to him and ___", nobody would say The book was given to I, they would (presumably) always say the book was given to me, so you don't say the book was given to him and I. Him and me would be correct. would use me there. Reducing it to the one pronoun works about 95% of the time.

Which is all probably more confusing than before.
