I always trim the belly meat but I have also always taken the skin off when I fillet. I suppose they would tend to fall apart without the skin there during the grilling process? I will save some out of the canning process this fall and will experiment. The recipe following your post sounds quite interesting also.

We have done the boil thing. As a matter of fact we do some fishing out of Port Wing on Lake Superior. They have a fish boil every labor day that I always look forward to.
