I freeze fish in water insuring that the fillet's are totally contained in ice. I have had fish that were 2 years old and you can't tell the difference from fresh caught. I might add that the 2 year old fish was a mistake on my part that I try not to repeat:)

Cardboard milk cartons work well for this. Cut the top and put in your fillets, fill with water and freeze. Next day add 1/2" of water to cover anything that floated. Little masking tape on the outside with the date and kind of fish. I keep an upright freezer just for the fish and this seems to work well for me.
