No I take the fillet off. While the skin is still on scrape the sharp edge of of your knife from the tail forward, the Y bone will leave a line you can see. Run the knife down the fork of the bone and then slant upward following the bone. Then just cut a little deeper to get under the other side of the Y and move down the bone to intersect your other incision. Tear out that little triangle strip of meat and bone and wallah! Remove the meat from the skin and eat away:) I found the 5 step to be labor intensive enough that I didn't do it. I would eat around the bones and give the tail section without bones to the wifey and kidlets.
