The tofu cheese is made by a company called "galaxy foods." galaxyfoods.com
They make all kinds of flavored tofu cheese. The one I use for the pizza is called veggie shreds, mozzarella flavor. fat = 3g. cal. = 60
It really melts, even better than the non fat mozzarella from polly - O. They have a shredded cheddar also, that has worked great on burrito night.
They have veggie slices, in all flavors too including american. It makes a great melted cheese sandwich. My supermarket stocks it in the produce section along with the tofu, and the soy products. For the pizza dough, I use the frozen dough right from the supermarket frozen food case. It is not high in fat, I think maybe 1g. per serving, and tastes the best. If you feel ambitious you could make your own with wheat flour, and then you'll have a complex carbo. I also use jar pasta sauce, it seems to taste the best too. The lowest fat content of all the brands will be found in the tomato basil flavor. Then I make it like a normal pizza without any meat. The only thing to keep in mind is that since the tofu is not really cheese once it melts it will start to break down and become not so appetizing. So if I am using alot of veggies then I'll either cook the pizza without the cheese first and then at the last minute add it, or cook the veggies in a pan first then add them to the pizza with the cheese. whew....... that was very long winded.
Since we don't count calories as much as fat grams, I have no earthly idea how many calories there are in a tofu cheese pizza. However, if you asked me "how many licks there are in a tofu cheese pizza, then I'd have to say "thrree"!!"
