Okay, I'll describe a possible scenario for you.
The US plane is cruising along a mile or two out into international airspace. The Chinese interceptors try to bracket our plane and nudge it into Chinese airspace. The Chinese planes are too close and are flying at stall-speed - a speed that makes them practically unmanuveurable - in order to stay as slow as the prop-plane. Our plane, in order not to be forced into Chinese airspace, initiates a turn that the Chinese pilot has not allowed himself enough room to respond to.
Just one possible scenario, FWIW.
