Last night I tried the fried chicken I saw on TV. Easy and it was good. I used skinless, boneless breasts but it will work even better with regular chicken pieces.
Soak the chicken pieces in saltwater over night or all day. I added a little powdered garlic and powdered mustard. It's the soaking in saltwater that's important.

Take the chicken while still damp, pepper them and shake them in flour.

Heat vegetable oil and some butter in a skillet. Enough that it will come 1/2 the way up the meat. When the oil sizzles when you spit er drop a drop of water in it add the chicken. Don't crowd it or you will cool the oil. Cook 6 minutes covered, 9 minutes uncovered. Turn the pieces over and 6 minutes covered and 9 uncovered. Drain on paper towels. It was great both hot and cold.
