Quick and easy recipe for fried chicken. I use Saltine crackers crushed up.

First is, I rinse the chicken and dry with a towel. Beat two eggs and dip chicken in, then dip in the crushed crackers. Place in heated veg. oil. I use an electric skillet and hear the oil to 325 degrees. Cook until a golden brown color and drain on paper towels.
