Sorry, I read the "recipe" for the chicken today and I would have to copy the whole article verbatum and it is 3 pages long. The gist of it was "brine the chicken parts in Buttermilk for at least 3 hours in the refrigerator. Shake off the "brine" and dip the chicken in flour, shake it off, dip in egg mixture (2 eggs, 1 cup of buttermilk mixed) then dip in flour again. After much testing they settled on Peanut oil. Gave the best texture and flavor. Fry at 375 degrees for about 8 minutes. Of course a breast will take longer that a wing so keep a close eye on it. Cooks Illustrated goes into mucho detail when describing their methods for cooking and are very thorough. It would take me an hour just to type the findings here.
