Have you ever eaten Cajun food cooked by a Cajun cook? Or Creole food cooked by a Creole cook? If so, then I believe you if you think it's weird. But if you have only had something that calls itself Cajun or Creole cooked by someone who isn't Cajun or Creole, all I can say is there is a reason people rave about it. It takes a long time to learn how to do it right. I still can't get my red beans to come out right.

Emeril Lagasse is not Cajun nor Creole, by the way. He's from Massachusetts. Chef Paul Prudhomme is Cajun.
