The typical applications where QoS for FC-based disk would be of use are video streaming, high OLTP, and backup/recovery scenarios. A SSP would also make use of it for provisioning bandwidth by type of application and customer.
On security, bringing IP into the mix will allow for creating VLANS, and data encryption, authentication technology (such as kerberos). This technology is all off-the-shelf, so by attaching storage to switches, then iSCSI routers & HBAs, it is easy. You don't gain security by merely attaching the SAN to any IP network, you have to attach to a secure IP network where these things are in place.
As for what you will see in 6-12 months, I won't comment on specifics, as I am on non-disclosure with many SAN, NAS, and FC switch and RAID subsystem manufacturers (probably everybody you invest in). I'll be glad to provide my insight from the perspective of somebody in the industry, as well as an investor, and answer technical or marketing questions on what is good or bad and why.
