I figured once farmers learned organic farming can be more profitable
more of them would do it. The question is will supply increase enough
to drop prices thus making it less profitable, time will tell. Some items
like potatos, onions and zuccini, when out of season, are 4x or more the
price of non organic produce but other items like bananas and lettuce
sell at about the 50% premium mentioned in the article, sometimes
the premium goes as low as 25%. I try to eat mostly organic but when
organic zuccini or organic onions are $3.99/lb. and fresher regular ones
are only .39 lb. sometimes I do go for the regular stuff. Situations like
that only happen in the winter in cold climates though.
