Peach --- they just happend to have the ducks... ...in our local supermarket -- and they were fresh! the way i cooked it --- it wasnt very greasy the finished product that is. i trimmed off all the large fatty pieced and when i put the duck in a baking pan i put in on top of a couple of small bread pans which kept it up about 1 1/2 inches from the bottom of the pan -- so it wasnt soaking in its own drippings. i ate the ornages and the tangerines that i had stuffed inside. next time -- im gonna try a different marinade and sauce. have a nice weekend -- its warm here in CA. Lazarus
